Tea production process
1. Picking fresh leaves:
Summer and autumn have strong sunshine, high temperatures, drought and little rain, buds and leaves are prone to aging, and tea polyphenol content is high. Therefore, picking famous tea in summer and autumn should be done early, tender and diligently. When picking famous green tea in summer and autumn, it is better to pick single buds or one bud and one leaf.
2. Finalize:
Finishing method: Use steam to finish. Steam-killed green leaves retain more chlorophyll and are green in color. Moreover, moist heat is beneficial to the hydrolysis of tea polyphenols and protein, reducing the content of tea polyphenols and increasing the content of amino acids, which is beneficial to the quality of summer and autumn green tea.
Fixing temperature: High-temperature fixing can quickly destroy the activity of enzymes, and the content of tea polyphenols will also be appropriately reduced, which will help reduce the bitterness of summer and autumn tea.
3. Knead:
By adding an additive T (zinc gluconate solution or animal protein powder) during the rolling process of summer and autumn green tea, the bitterness of the tea leaves is reduced and the taste quality of the green tea is improved.
