From Qingming to Guyu is the golden season for picking Shoumei tea. The standard for picking is one bud and one leaf and one bud and two leaves at the beginning, and the bud length is 1.5 to 2.0 cm. The picked buds are placed on a bamboo plaque for 2 to 4 hours before being fried.

 In a far-infrared pan with a diameter of 60 cm. The pot temperature is 120-140℃, and the amount of leaves thrown is 300-400 grams. The slow stir-frying method promotes the evaporation of water, straightens the tea sticks, and fixes the shape. Stir-fry to the point where the pan temperature rises slightly by about 10°C. When it emits a long-lasting fragrance, the twisted tea becomes a powder with a water content of about 6% or less, store it in the pan and cool it down. The whole journey lasted 35-40 minutes.

Tea History

This is the origin of the original white tea craft. This kind of tea, which is only finished, not rubbed, and dried in the sun or simmer, is revealed, which resembles the eyebrows of Shouxian. The locals commonly call it Shoumeibai tea. At that time, it was made from the young shoots of local vegetable tea, commonly known as "Nankengbai" or "Xiaobai", because it is covered with Pekoe, it is also called "Pekoe Tea". Later generations referred to as white tea.
The Shoumei white tea made by the Xiao brothers in the Qing Dynasty was purchased by the court, and the locals referred to the items purchased by the court as tribute. The name of the tribute Shoumei white tea ("Gongmei white tea" for short) comes from this.
