Tea History and Producing Process
Maybe, white Tea is the earliest tea of Chinese tea. In actient China when peopledescovering tea, they found that sun-drying or baking the leaves can ensure that the tea could be easily stored and used for longer time. These steps formed the basis of the withering and drying processes that are still using now days.
Lots of white Tea trees originally is growing in the area around the city of Fuding, in Fujian province. And then it spread to the other areas around the city, then all of Fujian provience. The first type of White Tea produced was Silver Needle (Bai Hao Yin Zhen), in the area around Taimu Mountain near Fuding.
Originally Silver Needle was made from the buds of the Xiao Bai form of the tea bush. This form of the tea bush is smaller and slower growing, and so Silver Needle was expensive and rare. However around 1857 farmers around the town of Shuiji satrted to use the DaBai form of the tea bush. This one has larger buds, and – interesting – produces better quality white tea , with more white hairs on the buds, more fragrance and a stronger taste. the Bestitea white tea covered leaf bud was picked by hand from a high elevation grove of Da Bai tea trees in Fuding County, Fujian.

Once gathered, the buds were scattered on bamboo trays and slowly wilted with constant airflow for 30 hours. This step, called "fading", is unique to white tea crafting, as it allows mild enzymatic oxidation to occur in the leaf buds. The result is a tea that is more floral, rounder and creamier than green teas, with fruit rather than vegetal notes. After fading, processing is kept to a minimum, with a final six minute bake to finish the tea.
